Ingredients
- TOPPING:
- 2 -1/2 cups Krusteaz Buttermilk Pancake Mix
- 2/3 cup water
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 teaspoon grated nutmeg
- 4 tablespoons butter
- 1/2 cup sugar
- 2 teaspoons ground cinnamon
Preparation
Step 1
Preheat oven to 400 F
In a medium bowl, stir together pancake mix, water, sugar, vegetable oil, egg and nutmeg until just blended.
Spoon batter into a lightly greased or paper-lined 12-cup muffin pan, filling two-thirds full.
Bake for 12-14 minutes, or until a toothpick inserted in the center comes out clean.
To prepare the topping, melt butter and set aside. In a small bowl, stir together sugar and cinnamon.
While muffins are still warm from the oven, dip into melted butter and then cinnamon-sugar mixture. Makes 12 servings.
