Ingredients

  • Mix together:
  • 2 C flour
  • 1 1/2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • In another bowl:
  • 1 C vegetable oil
  • 2 C sugar
  • 4 eggs, one at a time
  • Mix both together.
  • 2 C grated carrot
  • 1 can crushed, drained pineapple
  • 1/2 C raisins
  • ICING:
  • 1 large cream cheese
  • 1/2 C butter
  • 2 C icing sugar
  • 1 tsp vanilla
  • 1 T orange juice

Step 1

Pour into 2 layer pans (or 1 bundt pan). Bake 15 minutes at 375 F; then 35-40 minutes at 350 F. Let cool.

ICING:
Beat cheese and butter until fluffy. Beat in icing sugar, vanilla, and OJ. Spread on cake.
