Double-Dipped Potato Chip Chicken

Ingredients
- 1 1/4 c. crushed potato chips
- 1 large egg
- 4 skinless, boneless chicken breast halves(1 1/4 lb.)
- 1/4 tsp. pepper
- 1/4 c. light mayo
- 2 Tbs. bargecue sauce

Preparation
Step 1
Preheat oven to 450.
Place crushed chips on a large plate.
Place egg in shallow dish and beat.
Dip breasts in egg, then to crumbs, pressing chicken so crumbs adhere.
Place on ungreased cookie sheet.
Dip chicken again in remaining crumbs so that chicken is completely
coated.
Return to cookie sheet. Sprinkle both sides of chicken with pepper.
Bake until chicken loses its pink color, about 15 min.
Meanshile combine mayo and barbecue sauce for dipping.
