Italian Steak Sandwich

Ingredients

  • 1 pound beef round tip steaks, cut 1/8 inch thick
  • 3 tsp olive oil, divided
  • 1 zucchini, cut in 1/4 inch slices
  • 1 onion, thinly sliced
  • 1 red bell pepper, cut in strips
  • 1 tsp dried Italian herb seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 crusty hoagy rolls, 6 inches long, split
  • 4 slices provolone cheese

Preparation

Step 1

Cut steaks into 1-in wide strips. Set aside.

In nonstick skillet, heat 2 tsp olive oil over medium-high heat. When hot, add zucchini, onion, pepper, and herbs. Stir-fry until crisp-tender. Remove from skillet.

In same skillet, heat 1 tsp oil until hot. Stir-fry beef in batches until outside surface is no longer pink. Return all beef to skillet. Season with salt and pepper. Stir in vegetables and heat through.

Arrange mixture on rolls and top with cheese. Broil until cheese is melted.
