Ahi Tuna Tartare Tower with Wonton Cups

Ingredients

  • Avocado Bowl:
  • 2 medium-sized avocados-diced
  • Juice from 1/2 lime
  • 1 1/2 green onion tops-chopped
  • 1 T cilantro
  • 1/4 t Kosher salt
  • Olive oil
  • Crushed red pepper
  • Sushi Bowl:
  • 12 oz. Sushi grade Ahi tuna-diced
  • 1 1/2 green onion tops
  • 2 cloves garlic-minced
  • 1 t grated ginger
  • 1/2 t orange zest
  • 1/2 t cilantro
  • 1 T sesame seeds
  • 1/4 t Kosher salt
  • Sesame oil
  • Soy sauce

Preparation

Step 1

In one bowl combine avocados, lime juice, green onion tops, cilantro and salt. Drizzle with olive oil and sprinkle with crushed red pepper. Gently mix together and set aside.
In a separate bowl combine tuna, green onion tops, garlic, ginger, orange zest, cilantro, sesame seeds and salt. Add sesame oil and soy sauce to taste.

To assemble a tower:
Each layer should be 1/3 of the height of the ring mold. Place 1 layer of avocado mix in the bottom, followed by a layer of tuna mix and topped with another layer of the avocado mix.

To make the wonton cups:
Preheat oven to 350 F
Lay wonton skins on a flat surface and spray with canola oil. Flip each skin and spray the other side as well.
Form skins into small cups using a small muffin pan.
Heat for 7 minutes
