Chestnut Brownies

Ingredients

  • 4 ounces unsweetened chocolate
  • 8 ounces sweet, unsalted butter (2 sticks)
  • 4 eggs
  • 2 cups granulated sugar
  • 2/3 cup sifted chestnut flour (available at Cassano’s)
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2/3 cup coarsely chopped roasted chestnuts

Preparation

Step 1

Preheat oven to 350 F. Grease a 9-by-13-inch pan. Melt chocolate and butter over medium heat in a small saucepan and set aside to cool. Beat eggs and sugar until creamy. Add vanilla. Fold melted chocolate into egg mixture. Mix thoroughly. Sift chestnut flour and baking powder together and fold into batter. Mix until just blended. Add chopped chestnuts. Pour into prepared pan and bake for about 35 minutes or until a toothpick comes out clean. Cool 30 minutes. Cut into squares.
