Cream of Broccoli and Cheese Soup

Ingredients

  • 3 pkg instant chicken broth and seasoning mix
  • 1 onion, chopped
  • 3 small cubed potatoes
  • 1 carrot shredded
  • 1/4 tsp dried sage
  • 4 cups chopped broccoli
  • 4 cups skim milk
  • 3/4 cup shredded sharp cheddar
  • 1/4 tsp black pepper

Step 1

Spray large nonstick saucepan with pam; heat. Add the onions and cook, stirring constantly until softened, about 5 minutes. Add broccoli, potatoes and 2 cups water, bring to a boil.

Reduce heat and simmer, covered, until veggies are tender, about 20 minutes. With slotted spoon, transfer veggies to a blender. Puree, then return them to the liquid. Add milk, broth mix and carrot; bring to a boil.

Reduce the heat and simmer, stirring as needed, until carrot is softened, about 5 minutes. Remove pan from heat; cool about 1 minute. Add the cheese, sage and pepper; stir until the cheese is melted.
