Ingredients

    tbsp. olive oil

  • 1/2

    tsp. fine sea salt

  • 1/2

    tsp. freshly ground black pepper

    baby Yukon Gold and red potatoes (1 1/2 lbs.) quartered

  • 3

    tbsps. chopped fresh dill

  • 2

    tbsps. fresh lemon juice

Directions

Preheat oven to 450 degrees Heat a large rimmed baking sheet in oven for 5 mins. Combine first 4 ingredients in a large bowl, tossing to coat. Spread potato mixture in a single layer on hot pan. Bake at 450 degrees for 17 mins. or just until tender. Place potatoes in a bowl. Add dill and lemon juice, toss gently.
