Roasted Dill Potatoes
- 1 tbsp. olive oil
- 1/2 tsp. fine sea salt
- 1/2 tsp. freshly ground black pepper
- 32 baby Yukon Gold and red potatoes (1 1/2 lbs.) quartered
- 3 tbsps. chopped fresh dill
- 2 tbsps. fresh lemon juice
Preheat oven to 450 degrees
Heat a large rimmed baking sheet in oven for 5 mins. Combine first 4 ingredients in a large bowl, tossing to coat. Spread potato mixture in a single layer on hot pan.
Bake at 450 degrees for 17 mins. or just until tender. Place potatoes in a bowl. Add dill and lemon juice, toss gently.
