BROCCOLI RABEWITH RAISINS AND PINE NUTS

Ingredients

  • 1/2 cup plus 4 tbsp olive oil, divided
  • 4 large cloves garlic, sliced
  • 1/2 -1 tsp red pepper flakes
  • 4 bunches broccoli rabe, trimmed and
  • blanched, divided
  • 1/4 cup raisins, divided
  • 1/4 cup pine nuts, toasted, divided
  • Salt and pepper to taste

Preparation

Step 1

Heat 1/2 cup olive oil, garlic and red pepper flakes in a medium skillet over medium low heat for IO~I2 min., or until garlic is slightly browned; set aside. Working in batches, in large skillet heat 2 tbsp oil over medium-high heat. Add half the broccoli rabe and saute until heated through. Toss with half the raisins, nuts and seasoned olive oil. Repeat with other ingredients. Toss; salt to taste.
