Ingredients
- Quiche:
- Cooking spray
- 1 - 9 " pie crust
- 1/2 C onion, finely chopped
- 1/2 pkg Gimme Lean Sausage
- 2 C shredded cheddar cheese
- 2 C milk
- Egg substitute to equal 8 egs
- sprinkle of nutmeg
- salt and pepper to tates
- Salad:
- 9 oz. bag of spinach
- 1/2 C sliced beets, chopped
- Balsamic Vinaigrette
- 2 bag pecan pieces

Step 1
Bake pie crust according to pkg. directions.
preheat oven to 375 F. Saute onion and sausage in skillet sprayed with cooking spray. Transfer to cooled pie shell. Sprinkle with cheese. Whisk milk and eggs i small bowl, adding salt, pepper, and nutmeg. Pour mixture over sausage and cheese. Bake for 35 to 40 minutes--until middle has set.
In large bowl toss spinach, beets and dressing. top with pecans.
