Ingredients

  • 1 1/4

    cups vinegar

  • 1/2

    teaspoon ginger

  • 1/2

    teaspoon crushed red pepper

  • 1 1/2

    cup coarse chopped onions (about 2 onions)

  • 7-8

    large firm peaches, peeled and sliced (6 cups)

  • 3

    cups sugar

  • 2

    cloves garlic, crushed

  • 1

    cup raisins

  • 1/2

    teaspoon salt

Directions

In large saucepan, boil vinegar and sugar 5 minutes. Add remaining ingredients, Cook slowly, uncovered stirring occasionally, 20-30 minutes or until peaches are tender and chutney is thickened. Spoon hot chutney into 5-6 clean, hot half pint jars, leaving 1/2 inch head space. Seal with lids. Process in boiling water bath 10 minutes. Woman's Day, September 1, 1978
