Ingredients
- 2 lbs ground beef (80/20 preferrably)
- 2 eggs
- 3/4 - 1 cup seasoned bread crumbs
- 4 – 6 Tbsp water
- 4 Tbsp minced onions
- 1 20 oz can of unsweetened pineapple chunks (reserve juice!)
- 1 large green pepper, diced
- 1 cup of brown sugar
- 2 Tbsp cornstarch (you may need more if the sauce is not thickening)
- 2/3 cup of white vinegar
- 2 Tbsp soy sauce
Preparation
Step 1
Mix ground beef, eggs, water, bread crumbs and onion.
Roll into small meatballs (approx 32) and bake @ 350F for about 20 minutes turning once. This can be prepared a day in advanced and refrigerated until ready to assemble.
Place meatballs in crock pot and top with green pepper and drained pineapple chunks.
In a separate bowl, mix reserved pineapple juice, brown sugar, cornstarch, vinegar and soy sauce.
Pour sauce over meatballs, pineapple and green peppers.
Cook on low for 2-3 hours or until heated through. If the sauce has not thickened, mix 1-2 Tbsp additional cornstarch with a small amount of cold water until dissolved. Pour into crockpot. Stir and let thicken an additional 30 mins.
