Hawaiian Crockpot Cocktail Meatballs (homemade)

Ingredients

  • 2 lbs ground beef (80/20 preferrably)
  • 2 eggs
  • 3/4 - 1 cup seasoned bread crumbs
  • 4 – 6 Tbsp water
  • 4 Tbsp minced onions
  • 1 20 oz can of unsweetened pineapple chunks (reserve juice!)
  • 1 large green pepper, diced
  • 1 cup of brown sugar
  • 2 Tbsp cornstarch (you may need more if the sauce is not thickening)
  • 2/3 cup of white vinegar
  • 2 Tbsp soy sauce

Preparation

Step 1

Mix ground beef, eggs, water, bread crumbs and onion.

Roll into small meatballs (approx 32) and bake @ 350F for about 20 minutes turning once. This can be prepared a day in advanced and refrigerated until ready to assemble.

Place meatballs in crock pot and top with green pepper and drained pineapple chunks.

In a separate bowl, mix reserved pineapple juice, brown sugar, cornstarch, vinegar and soy sauce.

Pour sauce over meatballs, pineapple and green peppers.

Cook on low for 2-3 hours or until heated through. If the sauce has not thickened, mix 1-2 Tbsp additional cornstarch with a small amount of cold water until dissolved. Pour into crockpot. Stir and let thicken an additional 30 mins.
