Frogmore Stew

Ingredients

  • 1 bell pepper
  • 1 large onion
  • 1 clove garlic
  • 1 bunch fresh parsley
  • 1 'slack celery
  • 2 tablespoons oil
  • 2 pounds hot sausage (kielbasa)
  • cut into 2-inch pieces
  • 2 tablespoons Old Bay Seasoning
  • 1 .bay leaf
  • 2 pounds new potatoes,
  • halved
  • 8 to 10 .ems com, cut into 2- to 3-incb
  • chunks .
  • ~ 4 pounds shrimp, in the shell

Preparation

Step 1

Coarsely chop the pepper, onion,
garlic, parsley and celery, then slowly
cook in the oil in a large frying pan with
the sausage and seasonings until the
vegetables are soft. In a large stew pot,
cover the potatoes with water and boil'
until cooked but still firm.
Just before serving, combine the
sausage .and vegetable mixture with the
I potatoes and water, add the corn and
I shrimp. Simmer slowly until shrimp
turn pink· Serve with homemade com
bread and salad.
