Mushroom and Leek Spring Rolls with Mint Dipping Sauce

Ingredients
- Mint dipping sauce:
- 2 T canola oil
- 1 T fine chop garlic
- 1 T fine chop ginger
- 1 T fine chop Serrano
- 1/2 cup Hoisin
- 2 cups thin slice shitake
- 2 large leeks julienned(white only)
- salt and pepper
- 1/2 cup cilantro rough chop
- 1 cup chop scallion
- 1 cup bean threads soaked. drained and chopped into 2" pieces
- 1 pkg lumpia or spring roll wrapper
- 1/4 cup mint leaves cut into thin ribbons
- 1 t sugar
- 1/4 cup soy sauce
- juice of 1 lemon

Preparation
Step 1
Saute garlic, ginger & Serrano quickly on high heat. No burn please. Reduce heat to medium & add hoisin and cook till raw flavor from hoisin eases off, about 3 minutes. Add leeks and shitakes and cook for 5 minutes more. Salt and pepper to taste, drain and cool.
Transfer to bowl and add cilantro, scallions and bean threads.
Wrap and either saute or deep fry.
Mint dipping sauce:
Mix all ingredients together in a bowl.
