Mushroom and Leek Spring Rolls with Mint Dipping Sauce

Ingredients

  • Mint dipping sauce:
  • 2 T canola oil
  • 1 T fine chop garlic
  • 1 T fine chop ginger
  • 1 T fine chop Serrano
  • 1/2 cup Hoisin
  • 2 cups thin slice shitake
  • 2 large leeks julienned(white only)
  • salt and pepper
  • 1/2 cup cilantro rough chop
  • 1 cup chop scallion
  • 1 cup bean threads soaked. drained and chopped into 2" pieces
  • 1 pkg lumpia or spring roll wrapper
  • 1/4 cup mint leaves cut into thin ribbons
  • 1 t sugar
  • 1/4 cup soy sauce
  • juice of 1 lemon

Preparation

Step 1

Saute garlic, ginger & Serrano quickly on high heat. No burn please. Reduce heat to medium & add hoisin and cook till raw flavor from hoisin eases off, about 3 minutes. Add leeks and shitakes and cook for 5 minutes more. Salt and pepper to taste, drain and cool.
Transfer to bowl and add cilantro, scallions and bean threads.
Wrap and either saute or deep fry.

Mint dipping sauce:
Mix all ingredients together in a bowl.
