Asian Slaw with Blender Peanut Sauce

Ingredients

  • 3 Tbsp. unseasoned rice vinegar
  • 2 Tbsp. soy sauce
  • 2 Tbsp. creamy peanut butter
  • 1 Tbsp. coarsely chopped peeled fresh ginger
  • 1 Tbsp. packed brown sugar
  • 1/2 head Savoy cabbage, thinly sliced (about 5 cups)
  • 1 red bell pepper, cut into thin strips
  • 1 cup packaged matchstick-cut carrots
  • 1/4 cup chopped fresh cilantro
  • 2 scallions, thinly sliced

Preparation

Step 1

Combine vinegar, soy sauce, peanut butter, ginger, and brown sugar in a blender and puree.

Toss together the remaining ingredients in a serving bowl. Drizzle with the dressing and toss to coat evenly.
