Ingredients

  • 1 large overgrown zuchinni from your garden
  • 2 medium tomatoes, chopped
  • 1 large onion, chopped
  • 2 cups cheddar cheese, shredded
  • 1/2 cup mozerella cheese, shredded
  • 3 of your favorite kind of sausages, sliced or any leftover meat
  • 1 medium bell pepper, chopped
  • sliced mushroom (desired amount)
  • 6 cups rice, cooked
  • Parmesan cheese

Preparation

Step 1

Cook rice and set aside. We like basmatic rice in this recipe. I use 3 cups uncooked.

Wash the zuchinni and cut lengthwise. Scoop out the seedy part and discard.

Scoop out the remaining zuchinni until the shell is about 1/2 in. thick. Cut this zuchinni into bite size peices.

Start out by frying onion in butter in very large skillet.After a few minutes add your chopped bell pepper.
Add your chopped zuchinni
Add salt and pepper to taste
Add sliced mushrooms
When the above is almost done add your cooked rice and chopped meat or sausage.
Add shredded cheeses
Add chopped tomatoes

Fill your zuchinni boats.
In a large roasting pan put about 1 in. water in bottom of pan, put something like a muffin tin inside of pan and set zuchinni boat in pan so the zuchinni is not sitting in water.
Cover and bake at 350 degrees for 45 minutes. Remove lid and continue to bake for 15 more minutes.
When ready to serve, sprinkle the zuchinni with parmasean cheese.
