Ingredients
- Frosting:
- 2 c sugar
- 1 c veg. oil
- 4 eggs
- 2 jars (6oz) carrot baby food
- 2 c all-purpose flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 1 pkg cream cheese softened
- 1/4 c butter softened
- 1 tsp vanilla
- 4 c confectioners sugar

Preparation
Step 1
In a mixing bowl, beat the sugar, oil, eggs, and carrots. Combine the flour, baking powder, cinnamon, baking soda and salt; add to carrot mixture and mix well. Pour into a greased 15 x 10 baking pan. Bake at 350 for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool.
Frosting:
In a mixing bowl, beat the cream cheese, butter and vanilla. Blend in sugar until smooth.
