Ingredients

  • 1 1/2 cups Arborio Rice
  • 2 (14 oz.) cans fat-free low sodium chicken broth
  • 1 cup water
  • 3/4 cup freshly grated parmigiano-reggiano cheese
  • 2 tsps. grate lemon rind
  • 1 tsp. fresh thyme leaves
  • 1/4 tsp. freshly ground black pepper
  • Cooking spray
  • Fresh thyme sprigs

Step 1

Preheat oven to 350 degrees

Combine first 7 ingredients in an 11x7 inch baking dish coated with cooking spray.
Bake uncovered at 350 degrees for 37 to 40 mins. or until creamy, stirring after 20 mins.
Garnish with fresh thyme sprigs.
