Best Mexican Rice

Ingredients

  • 1 tsp. oil
  • 4 small (2 medium) tomatoes chopped
  • 1/2 green bell pepper chopped
  • 1 tsp. minced garlic
  • dash salt
  • dash pepper
  • 1 tsp. cumin
  • 1 cup white rice (not instant)
  • 2 cans (28 oz.) chicken broth
  • 1 tbsp. cilantro

Preparation

Step 1

Saute tomatoes, bell pepper, garlic, cumin, salt and pepper in oil.

Add rice and saute with veggies.

Add chicken broth and cilantro. Cover and simmer for 40 minutes.
