Fluffy Pineapple Tapioca

Ingredients

  • 3 Tablespoons tapioca
  • 3 cups milk
  • 3 eggs (separated)
  • 1 cup crushed drained pineapple
  • 1 teaspoon vanilla
  • 1/2 cup sugar

Preparation

Step 1

Soak tapioca in milk for 5 minutes.
Add egg yolks. Cook over medium heat ;until it comes to a full boil.
Remove from heat and add pineapple.
Beat egg whites until they form peaks.
Fold into the cooled, pineapple tapioca mixture.
May be served with whipped cream or plain.
