Ingredients

  • 1 C margarine, softened
  • 2 1/4 C brown sugar, lightly packed
  • 3 eggs
  • 1/3 C molasses
  • 4 C all purpose flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp nutmeg
  • 1 C raisins
  • 1 C walnuts, chopped
  • 1 C dried cranberries
  • 1 C dried apricots
  • 1 C pumpkin kernels
  • 1 egg, slightly beaten

Step 1

Cream margarine and brown sugar in large bowl with electric mixer until fluffy. Add eggs and molasses, beating until light and smooth.

Combine flour, baking powder, baking soda and spices. Stir into creamed mixture thoroughly. Add raisins and walnuts, stirring just to blend.

Shape dough on greased and floured baking sheets into 6 logs (14" long x 1 1/2" wide x 1/2" high). Put 2 logs per sheet; they spread during baking.

Brush with egg to glaze.

Bake at 375 F for 10-14 minutes, or until golden brown. DON'T OVERBAKE. The dough will still be quite soft. Cool, then slice diagonally into bars. Store airtight.
