Ingredients

  • 1 can (15oz) black beans, rinsed and drained
  • 1 can (4 1/2) chopped ripe olives, drained
  • 1 small onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 tbls vegetable oil
  • 2 tbls lime juice
  • 1/4 tsp salt
  • 1/4 tsp crushed red pepper
  • 1/4 ground cumin
  • 1/4 tsp pepper
  • 1 pkg (8oz) cream cheese, softened
  • 2 hard cooked eggs, peeled and chopped
  • 1 green onion, sliced
  • 1 pkg (15oz) tortilla chips

Preparation

Step 1

Mix beans, olives, onion, garlic, oil, lime juice, salt, red pepper, cumin, and pepper. Cover and refridgerate 2 hours.

Spread cream cheese on bottom of serving plate. Spoon bean mixture evenly over cream cheese. Arrange egg on bean mixture in ring around edge of plate: sprinkle with green onion.
Serve with tortilla chips.
