Ingredients
- 1 lb butter
- 1 lb sifted flour
- 1 lb sifted sugar
- 1 dozen eggs
- 1/4 t baking powder
- 1/2 pint sherry wine
- 1 fresh coconut, grated
- 1 1/2 lb white raisins
- 1 lb blanched almonds
- 1 lb candied cherries
- 1 lb candied pineapple
- 1/2 lb citron
- 1 lb pecans
- 1/4 lb lemon peel
- 1/4 lb orange peel
- 1 t salt
- 1 cup orange juice
Preparation
Step 1
Pour wine over chopped fruit and let stand overnight.
Next morning, dredge fruit and nuts with 1 cup flour.
Cream butter and sugar.
Add eggs, 1 at a time and mix well after each.
Add remaining flour, grated coconut, salt and baking powder.
Add dredged fruit alternately with orange juice and mix well.
Bake in a 10 inch tube pan, greased and lined with flour..
Cook in a preheated oven at 300 degrees for 3 1/2 hours.
