PORTUGUESE CHICKEN

Ingredients

  • 1 chicken
  • salt and pepper to taste
  • Flour to fry the chicken
  • cooking oil
  • 1 medium onion, minced
  • 1 cup sliced mushrooms
  • 2 garlic cloves
  • 1 tablespoon curry
  • 1/2 cup dry sherry
  • 1 cup white wine
  • 1 bay leaf
  • 1 tablespoon parsley
  • 2 cups chicken broth

Preparation

Step 1

Cut chicken and sprinkle salt and pepper on the pieces. Dredge chicken in flour, shaking off excess. Heat oil in large skillet over medium flame . Add chicken pieces and fry until slightly golden. Set aside.
In a large pan heat the oil over medium
heat Add onion and saute until golden. Add mushrooms and garlic and saute for 5 minutes. Add curry, sherry and wine and let cool for 5 minutes. Add bay leaf, parsley,chicken broth and let boil for 5 minutes. Add chicken pieces and let cook for 30-45 minutes at medium-low heat.
