Ingredients
- 1/4 cup flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp oregano
- 4 Tbsp butter
- 4 Tbsp olive oil
- 4 chicken cutlets
- 1 cup mushrooms, sliced (of course we use more)
- 1/4 cup sherry
- 1/2 cup marsala
Preparation
Step 1
Trim and pound chicken breasts or use cutlets. Dredge in mixture of the following: flour, salt, pepper and oregano. Heat butter and olive oil in saute pan over medium-high heat. Brown chicken on each side, remove from pan and keep warm. Add mushrooms to pan and brown till desired. Add sherry and marsala and cook till thickened. May need to add corn starch to get desired consistency.
