Ingredients
- 1/4 lb Wild Rice
- 1/2 lb Bacon- diced
- 1/2 med Onion- diced
- 1 stalk Celery-diced
- 1/4 lb Mushroom-diced
- 1 large potato-diced
- 6 Cups Broth
- 1/2 lb cooked Chicken or Turkey diced
- Roux (Flour,Butter & Li

Preparation
Step 1
Soak rice for 6 hours then bring to a boil in large kettle till done, should be tender. Drain, rinse and set aside.
Saute bacon till almost done, add celery,onion and mushrooms till tender. Drain off excess grease. Add rice and seasonings.
Cook potatoes and set aside. In large kettle bring broth to a boil and thicken with Roux.
Add half & half or milk to thin to the desired consistency. Add Rice, cooken Chicken and Potato and simmer.
