Salad - Lite Spring

Ingredients

  • Oranges - 1 1/2 (juice of 1 orange - fruit of 1/2 orange)
  • Lemon - 1 (juice of 1/2 lemon)
  • 1/2 red onion chopped
  • 1/4 cup olive oil
  • 1/8 tsp. salt
  • 4 big handfuls mixed salad greens
  • 1/2 cup walnuts halved
  • 1/3 cup pitted black olives (wrinkly oily type)
  • crumbled blue cheese or feta

Preparation

Step 1

Mix for dressing:

Juice of 1 orange; juice of 1/2 lemon; red onion; olive oil and salt.
Blend well - can refrigerate overnight.

Salad Preparation:

Mix greens with walnuts, small pieces of 1/2 orange and olives. Toss well with the dressing. Be sure walnuts, orange pieces and olives are not all at the bottom of the salad.

Sprinkle with blue cheese on top before serving. Garnish with remaining 1/2 orange slices.
