Ingredients

  • 1/3 bag uncooked egg noodles
  • 1 pound ground beef
  • 1 can fire-roasted diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/2 block cream cheese, softened
  • 1/4 cup sour cream
  • 3 green onions, chopped
  • 1 cup shredded mozzarella cheese

Step 1

Cook noodles according to package directions; set aside and keep warm. Preheat oven to 350. Spray an 8x8 inch baking dish with cooking spray. Cook beef in a large skillet over medium heat until browned and crumbly; drain. Add tomatoes, tomato paste, 1/2 cup water, salt, and Italian seasoning to the skillet. Bring to a boil, reduce heat, and simmer 8 minutes, stirring occasionally. Stir together cream cheese, sour cream, and green onions. Add egg noodles, stirring to coat. Place noodles in prepared baking dish. Top with beef mixture; sprinkle with cheese. Bake 25 minutes or until hot and bubbly.
