Warm Chicken Spinach Salad

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 2 T cooking oil
  • 1 1/2 c sliced fresh mushrooms
  • 1 10-oz package prewashed fresh spinach
  • 1/2 c chopped walnuts, toasted, if desired
  • 1/2 c chopped walnuts, toasted, if desired
  • 2 T finely shredded Parmesan cheese
  • salt and pepper

Preparation

Step 1

Season chicken with salt and pepper. In a very large skillet, cook chicken in hot oil over medium heat for 8-12 mins or until chicken is no longer pink, turning once. Remove chicken from skillet and keep warm.

Add mushrooms to skillet. Cook, stirring constantly, for 2 mins. Add spinach to skillet. Cook, covered, for 1-2 mins or until spinach is just wilted, turning once. Stir in walnuts. Season to taste with additional salt and pepper. Transfer to a serving bowl and sprinkle with Parmesan cheese. Serve chicken with spinach.
