Ingredients
- 8 thin pork cutlets pounded to 1/8"
- 1 t salt
- 1/2 t pepper
- 2 eggs
- 1 1/2 c breadcrumbs
- 4-6 T oil
- 4 slices bacon finely chopped
- 1 med onion finely chopped
- 1 # mushrooms sliced
- 2 T unsalted butter
- 1 T flour
- 1 c chicken broth
- 2 T sour cream
- 1 t thyme
- 1 t parsley
Preparation
Step 1
Preheat oven to 200 degrees. Have 2 paper towel lined plates ready. Sprinkle cutlets with s&p.Dip in eggs then bread crumbs. Place in large skillet with oil. Cook until evenly browned about 2 min per side. Place on plate to drain then transfer to oven to keep warm. Place bacon in skillet cook until fat is rendered and bacon crisp. remove, add onion and cook until browned 3-5 min. Add mushrooms and butter and cook until soft and brown 10 min. Add flour and stir to combine add broth and cook until reduced and thickened. remove from heat add sour cream and herbs. Stir. Serve immediately over chops.
