Chicken or Beef Cutlets

Ingredients

  • Required amount of chicken or beef for event. I usually have at least 3 lbs of chicken or a 3 lb eye of round (thinly sliced).
  • Eggs
  • Salt
  • Pepper
  • Parmesian Cheese
  • Seasoned bread Crumbs
  • Oil

Preparation

Step 1

Chicken:
Cut into desired pieces. Gently tenderize.

Beef:
Have butcher thinly slice an eye of the round. Or, put eye of round in freezer until slightly frozen, then slice thinly. Tenderize

Dip meat into egg mixture (crack 3 at a time and add tbsp of water, salt and pepper)

Dip agaiin in mixture of bread crumbs and parmesian cheese.

Get all or most of the meat dipped before beginning to fry.

Fry in oil until golden brown. Drain and cool on paper towels.

Freeze between layers of waxed paper - bake in 325 oven to warm.
