Ingredients

  • 4 qt sliced medium cucumbers
  • 6 medium onions
  • 2 green peppers
  • 3 cloves garlic
  • 1/3 c canning salt
  • 5 c sugar
  • 3 c cider vinegar
  • 1 1/2 t turmeric
  • 1 1/2 t celery seed
  • 2 T mustard seed

Preparation

Step 1

Thinly slice unpeeled cucumbers. Add onions, peppers, and 2 whole garlic cloves. Add salt.

Cover with cracked ice; mix thoroughly. Let stand 3 hours; drain well.

Combine remaining ingredients and pour over cucumber mixture. Heat to just a boil.

Place in jars leaving 1/4 inch head space and process in water bath canner for recommended time. I process for 15 minutes.
