Cold Cucumber Soup

Ingredients
- 2 T butter
- 1/4 c chopped onion or one leek
- 2 c. Diced unpeeled cucumber
- 1 c watercress leaves ( I usually don’t add)
- 1/2 c finely diced raw potato
- 2 c chicken broth
- 2 sprigs parsley
- 1/2 t salt
- 1/4 r. ground black pepper
- 1/4 t dry mustard
- 1 c. heavy cream
- Chopped chives, cucumber and radishes garnish

Preparation
Step 1
1. In a saucepan melt the butter and cook the onion in it until it is transparent. Add the remaining ingredients except the cream and vegetables for garnish and bring to a boil. Simmer fifteen minutes, or until the potatoes are tender,
2. Puree in and food processor , correct the seasonings and chill. Before serving , stir in the cream Garnish with chopped veggies..
I will use 1/3 c cream and the rest water, still get great taste without all the fat.
