Kicked-Up Campfire Beans

Ingredients

  • 32-oz. pkg. dried pinto beans
  • 2 red peppers, finely diced
  • 1 onion, finely diced
  • 5 cloves garlic minced
  • 2 t. chili powder
  • 2 t. salt
  • 2 t. coarse pepper
  • 1 t. cayenne pepper
  • 1 t. ground cumin
  • 1 T. Worcestershire sauce
  • Optional: 2 t. hot pepper sauce

Preparation

Step 1

Cover beans with water in a Dutch oven. Bring to a boil over high heat; reduced to low. Cover and simmer for 2 hours, adding more water as needed. Add peppers, onion and garlic.

Cover; cook for another one to 2 hours, adding water as needed. Stir in seasonings and sauces. Simmer an additional 30 to 40 minutes, until thickened and beans are tender.

Serves 6.
