Blueberries-in-Milk Crustless Pie

Any heat stable sweetener can be used.

Ingredients

  • 1 cups unsweetened, frozen blueberries
  • 3 Tablespoons granulated fructose
  • 3/4 cup buttermilk
  • 1/4 cup low-fat milk
  • 3 Tablespoons flour

Preparation

Step 1

Lightly grease the bottom and sides of a 9-in. pie pan.
Place blueberries in pie pan and level.
Sprinkle 1 Tablespoon fructose over the top of blueberries.
Bake at 375 for 15 minutes.
Meanwhile combine remaining fructose buttermilk, milk and flour in a bowl.
Beat or whisk until flour is completely blended and mixture is smooth.
Pour butter milk mixture over blueberries.
Return to oven and continue baking for 30 minutes more or until middle of pie is just set.
Cool to room temperature; then chill
