Ingredients
- 2 tbsp. evoo
- 1 tbsp. lemon juice
- 1/2 tspn cayenne
- salt and pepper to taste
- 1 cup roasted corn kernels
- 1 15 oz. can black beans, rinsed and drained
- 1/2 cup finely chopped red bell pepper
- 1/4 cup thinly sliced green onions
Preparation
Step 1
Whisk evoo, lemon juice, cayenne salt and pepper in a bowl. Add corn, beans, red pepper and scallions. Stir to combine.
