CHILLED DILLED GRAPE TOMATOES

Great served on lettuce leaf with aioli and/or topped with a light sprinkle of grated Parmesan cheese or as an addition to many other salads and smoked fish.

Ingredients
- 1 pkg grape tomatoes
- 1 Tbs light olive oil
- 4 Tbs fresh dill diced
- salt and pepper

Preparation
Step 1
Lightly cross cut only the skin of the blossom end of each tomato. In batches, plunge the tomatoes into boiling water for 15 to 20 seconds then remove to an ice bath. Remove from the ice bath, dry and peel each tomato and transfer to a bowl. Add the oil and dill and toss well. Chill for 2-4 hours. Salt and pepper to taste just before serving.
