Eggplant Parmesan

Ingredients

  • 1 egg
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup breadcrumbs
  • 1 large eggplant
  • 1/4 cup oil
  • salt and pepper
  • 1 cup spaghetti sauce
  • 1 1/2 cup mozzarella

Preparation

Step 1

Beat egg in a shallow bowl and set aside. Stir together flour, salt and pepper in another bowl. Place breadcrumbs in another shallow bowl. Stem the eggplant and cut into thin slices.

Preheat oven to 350 degrees.

Heat 2 tbsp oil in large saute pan over medium high heat. Dip both sides of a slice of eggplant in the flour then egg, then breadcrumbs. Carefully place in pan and repeat with remaining eggplant slices. Cook for 3-4 minutes on each side or until golden brown. Wipe out pan after each batch so that oil does not burn or leave a burnt flavor on eggplants.

Place cooked eggplant on a baking sheet and season with salt and pepper. Spread some spaghetti sauce on each slice and sprinkle with cheese. Bake for 10 minutes or until cheese is lightly browned.
