Ingredients
- 6 oz. light cream cheese (Neufchatel), at room temperature
- 3/4 cup reduced-fat creamy peanut butter
- 3/4 cup sugar
- 1 3/4 cups heavy cream, divided
- 1 cup semisweet chocolate chips
- 1/2 cup chocolate wafer crumbs,about 10 cookies
- Whipped cream and peanuts, optional
Preparation
Step 1
Beat cream cheese and peanut butter until smooth. Gradually beat in sugar until combined, about 2 minutes. Gradually beat in 1/2 cup cream until light in color. Set aside. In saucepan over medium-low heat combine chocolate and 1/4 cup cream. Stir until melted and smooth. Remove from heat; cool 10 minutes. With mixer at high speed beat remaining cream until soft peaks form. Fold cooled chocolate mixture into whipped cream. Divide 1/2 of chocolate mixture among 6 serving dishes. Top with remaining peanut butter mixture. Sprinkle with wafer crumbs. Top with remaining peanut butter mixture then chocolate mixture. Garnish with whipped cream and chopped peanuts, if desired.
