Pramesan Crusted Chicken with Creamy Orange Suace

Ingredients
- Parmesan Crusted Chicken:
- 8 boneless, skinless chicken breasts
- 1/2 c melted butter
- 2 cloves garlic, minced
- 1 1/2 c fine bread crumbs
- 3/4 c grated Parmesan cheese
- 1 TBSP chopped fresh parsley
- 1 TBSP paprika
- 1/2 tsp salt
- 1/4 tsp fresh ground pepper
- Juice of 1/2 mandarin orange
- Creamy Orange Sauce:
- 1 1/2 cs heavy whipping cream
- 1/2 tsp fresh minced rosemary leaves
- 1/2 tsp fresh minced thyme leaves
- 1/4 tsp salt
- 1/4 c fresh sqeezed orange juice
- 1/2 tsp Tabasco sauce
- 20 mandarin orange slices
- Orange zest for garnish

Step 1
Parmesan Crusted Chicken
1. Preheat oven to 350 degrees F. Lightly grease a large baking dish. Pound chicken breast to 1/4in thickness using a mallet. Cut chicken breast in half.
2. Mix melted butter and garlic in a shallow bowl. Set aside. Mix bread crumbs, Parmesan cheese, parsley, paprika, salt and pepper in a large shallow bowl.
3. Dip each chicken breast into the garlic butter and then into the bread crumb mixture to coat. Roll up each breast and secure with a toothpick. Lay seam-side down in prepared baking dish. Squeeze juice of 1/2 mandarin orange over chicken breasts. If you are making this dish ahead of time, cover with plastic wrap and refrigerate until ready to cook.
4. Bake for 40 – 50 minutes, until chicken is done. Be sure to remove toothpicks before serving.
Creamy Orange Sauce:
5. Add cream, rosemary, thyme, salt, mandarin orange juice, and Tabasco to a saucepan and bring to a boil. Stir constantly, until sauce has thickened, approximately 8 minutes.
6.Gently stir in mandarin orange slices. Serve over Parmesan Crusted Chicken. Garnish with orange zest.
