Corn & Tomato Coleslaw

  • Green Cabbage Coleslaw
  • 1 cup charred fresh corn from the cob
  • 1 cup chopped tomatillos
  • 1 cup quartered grape tomatoes
  • 6 tablespoons EVOO
  • Fresh lime juice
  • Zest of 1 lime
  • Chopped cilantro



Step 1

1.Cook Green Cabbage Coleslaw.
2.To the cabbage, add 1 cup each charred fresh corn from the cob, chopped tomatillos and quartered grape tomatoes. When making the dressing, replace the mayo with 6 tbsp.EVOO, use fresh lime juice instead of vinegar and add the zest of 1 lime. Top with chopped cilantro.
