Carrot & Pineapple Salad (Jell-0)

It wouldn't be Christmas without this Jell-O salad! Another Seperack family tradition.

Ingredients

  • 1 pkg. orange gelatin
  • 1 C. boiling water
  • 1 C. cold water
  • 1 C. canned, crushed pineapple
  • 1 C. grated carrots
  • 1 head crisp lettuce

Preparation

Step 1

1. Add boiling water to orange gelatin, stir until dissolved.
2. Stir in cold water.
3. Chill until gelatin begins to set. (approx. 30 min.)
4. Add drained pineapple and grated carrots.
5. Rinse 1 qt. mold in cold water.
6. Pour gelatin mixture into mold.
7. Chill until firm. (approx. 3 hrs. or overnight)
8. TO UNMOLD: place mold in pan of luke-warm water for 10 seconds. Remove and invert on bed of lettuce. Serve immediately, with mayonnaise.
