My friend Allyson made these for a get together and they were so yummy that I asked for the recipe. I have made them several times and my family loves them. The longer that they sit in their brine the tastier they are which makes this a great make ahead dish.

Ingredients

  • 6 cucumbers cut into wedge chunks
  • 1/2 cup of coarse kosher or sea salt
  • 2 cups vinegar
  • 2 cups sugar
  • 2 cups water
  • Bunch of fresh dill, chopped
  • 4 cloves garlic, minced

Step 1

Toss the cucumbers in the salt in a large Tupperware container, cover and let the cukes sit for an hour at room temperature.
While the cukes are brining, mix the vinegar and sugar in a saucepan and boil them so that the sugar dissolves. Add cold water to the vinegar-sugar solution as needed to lessen the intensity of the flavor and pour the liquid over the cukes. Add the dill and garlic, toss it all together, cover it up and stick it in the fridge overnight. Shazaam! You've got yourself some fridge pickles.
