Ingredients
- 2 eggs, separated
- 4 tablespoons superfine sugar
- 1 1/2 cups milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon rum
- 6 oz pecans divided
- 2/3 cup confectioners' sugar
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
Preparation
Step 1
1. Start the waffle iron and preheat the oven to 200 to keep the finished waffles warm.
2. In the bowl of a stand mixer fitted with the whisk attachment, whip the egg whites to stiff peaks, then sprinkle in 2 tablespoons of the superfine sugar on high speed for 30 seconds. Reduce the speed to medium and add the milk, butter, vanilla, and rum.
3. Using the same bowl and whisk, mix the egg yolks and the remaining 2 tablespoons superfine sugar on high speed for 30 seconds. Reduce the speed to medium and add the milk, butter, vanilla, and rum.
4. Meanwhile, grind half of the pecans and all of the confectioner's sugar in a food processor into a fine powder. Whisk to combine them with the flour, baking powder, and salt in a large bowl. Fodl the flour mixture into the yolk base, then gently fold in the meringue.
5. Spray the waffle iron with plenty of nonstick spray. Ladel 1/4 cup batter onto each square of the iron. Sprinkle on a small handful of the remaining roasted pecans.
6. Cook following the waffle iron's directions. Serve imeediately or hold on a heat resistent plat ein the warmed oven.
