Rhubarb Buttermilk Muffins

Ingredients

  • 3/4 cup brown sugar
  • 1/2 cup oil
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 tea. salt
  • 1 tea. vanilla
  • 1 1/2 cup flour
  • 1/2 tea. soda
  • 1/2 cup nuts
  • 1 cup finely chopped rhubarb
  • 1/4 cup brown sugar
  • 1/2 tea. cinnamon
  • 1/4 cup nuts

Preparation

Step 1

Mix first ten ingredients in order given. Before baking sprinkle with mixture of brown sugar, cinnamon, and nuts.

Bake at 325 degrees 30-35 minutes.

Makes 16-18 muffins.
