CHICKEN SALTIMBOCCA

  • 4 boneless chicken breasts
  • 1/3 c flour
  • 2 T grated parmesan
  • 1 t italian seasoning
  • 1/2 t salt
  • 2 T olive oil
  • 4 slices proscuitto
  • 4 slices mozzarella
  • 1 t chopped sage leaves
  • 3/4 c progresso chicken broth
  • 1 T butter

Preparation

Step 1

Pound chicken 1/2" thick. Mix flour, parmesan cheese, italian seasoning and salt. Coat chicken with flour mix, shake off excess. Cook chicken in oil. Top each chicken with proscuitto and mozzarella cheese. Cover skillet, cook til cheese is melted. Add broth to skillet. Heat to boil, scrap brown bits from bottom. Boil 3 min and spoon on chicken
