Pasta with leeks and greens (Vegan/Gluten free)

Ingredients

  • 4 tbsp olive oil
  • 3 leeks washed and thinly sliced
  • 3 minced cloves garlic
  • 2 pounds mixed greens washed, stemmed and chopped
  • 1 pound gluten free pasta cooked
  • salt/pepper

Preparation

Step 1

Heat 3 tbs oil over medium heat. Add leeks and saute until soft (about 10 minutes). Add garlic and saute one more minute. Add chopped greens and cook for about 5 minutes until greens are tender and dark green. Toss cooked pasta with 1 tbs oil and cooked greens. Season with salt and pepper.
