Salmon with Oyster Mushrooms in Red Wine

Ingredients

  • 1 lb salmon
  • 4 tablespoons butter
  • 1/2 pound oyster mushrooms, sliced
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 teaspoon thyme, chopped
  • 1/2 cup red wine
  • 1/2 cup chicken broth

Preparation

Step 1

Preheat oven to 350 degrees.
In oven-proof skillet heat oil until shimmering. Add salmon skin side down and season with salt and pepper. Cook over high heat 3 minutes. Transfer to oven and cook for 10 minutes.
In large skillet, melt 1 tablespoon butter. Add mushrooms and cook over high heat, stirring occasionally, until lightly browned,, about 6 minutes. Add shallot, garlic and thyme and season with salt and pepper. Cook until shallot is softened, about 3 minutes. Add wine and broth. Puree in blender. Reheat and add 1 tablespoon butter.
Place mushroom puree on plate; top with salmon
