Strawberry, Strawberry Shortcake

Ingredients

  • Cream:
  • 1 18.5 oz package strawberry cake mix
  • 1 3.5 oz instant vanilla pudding
  • 1/3 cup oil
  • 3 eggs
  • 3/4 cup water
  • 1/4 cup flour
  • 1 1/2 cups chilled heavy cream
  • 3 T sugar
  • 1/2 t vanilla
  • sliced strawberries-quantity to suit your taste
  • blueberries-quantity to suit your taste

Preparation

Step 1

Combine cake mix, pudding, eggs, oil and water in a large bowl. Beat until combined. Using a cookie scoop, fill cavity of a whoopie pie pan or place a dollop of batter on lined cookie sheet. Bake in a 350 degree oven for 10 minutes. Remove to cool.

While cakes are cooling, in a mixer with whisk attached, mix cold heavy cream, sugar and vanilla on high until soft peaks form-about 3 minutes.

To assemble, place one cake on a plate, place sliced strawberries on top followed by a dollop of cream. Add blueberries. Repeat layer.
