Ingredients
- Cream:
- 1 18.5 oz package strawberry cake mix
- 1 3.5 oz instant vanilla pudding
- 1/3 cup oil
- 3 eggs
- 3/4 cup water
- 1/4 cup flour
- 1 1/2 cups chilled heavy cream
- 3 T sugar
- 1/2 t vanilla
- sliced strawberries-quantity to suit your taste
- blueberries-quantity to suit your taste
Preparation
Step 1
Combine cake mix, pudding, eggs, oil and water in a large bowl. Beat until combined. Using a cookie scoop, fill cavity of a whoopie pie pan or place a dollop of batter on lined cookie sheet. Bake in a 350 degree oven for 10 minutes. Remove to cool.
While cakes are cooling, in a mixer with whisk attached, mix cold heavy cream, sugar and vanilla on high until soft peaks form-about 3 minutes.
To assemble, place one cake on a plate, place sliced strawberries on top followed by a dollop of cream. Add blueberries. Repeat layer.
